Garlic-infused olive oil poached artichoke heart salad, fresh herbs, perfect for a light, refreshing meal.
Ingredients:
  • 3 large artichoke hearts
  • Kosher salt
  • Lots of extra virgin olive oil
  • 2 smashed garlic cloves
  • Juice of 2 lemons
  • 1 tablespoon minced parsley
  • 1 tablespoon minced chives
  • Black pepper
Instructions:
  • Prepare the artichokes by trimming and slicing them lengthwise into 1/4-inch thick pieces resembling artichoke heart silhouettes.
  • Give those artichokes a refreshing lemon bath by immersing them in a bowl of zesty lemon juice.
  • Infuse the garlic in a generous amount of olive oil in a heavy pot with a lid over low heat.
  • Season the artichoke heart slices generously with salt and layer them in olive oil. Ensure the slices are completely submerged, adding more olive oil as needed to cover them completely. Avoid using vegetable oils as substitutes to fully savor the rich olive oil flavor; alternatively, melted butter can be used.
  • Simmer gently: Cover the pot and cook on the lowest heat of your burner for 45 minutes. Allow the oil to cool for an additional 20 to 30 minutes after turning off the heat.
  • Once cooked, remove the artichokes from the oil and mix with the remaining ingredients. Feel free to enjoy the garlic if desired, as it's meant to enhance the oil's flavor. Serve at room temperature or store in the fridge for several days.
