Russian oladi: Light, tangy pancakes made with kefir and fried to crispy perfection.
Ingredients:
  • 3 tablespoons all-purpose flour
  • 0.5 cup plain kefir
  • 1 egg, beaten
  • 0.33333334326744 teaspoon baking soda
  • 1 pinch salt
Instructions:
  • In a large bowl, mix 1 cup plus 3 tablespoons of flour, kefir, egg, sugar, baking soda, and salt together until a smooth batter forms.
  • Preheat a nonstick skillet over medium-low heat and add oil. Pour 1 to 2 tablespoons of batter for each pancake and cook until bubbles form on the surface for 2 to 3 minutes. Flip and cook for an additional 2 to 3 minutes until golden brown. Repeat with the rest of the batter.
