Old Fashioned Mac and Cheese

Three-cheese creamy baked macaroni and cheese - a family favorite!
Ingredients:
  • 2 cups uncooked elbow macaroni
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 0.25 onion, minced
  • salt and pepper to taste
  • 0.25 pound processed cheese food
  • 0.25 pound shredded Cheddar cheese
  • 0.25 pound shredded Swiss cheese
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect cooking temperature.
  • Cook the elbow macaroni as instructed on the package.
  • In a small saucepan over medium-high heat, melt the butter until it becomes a smooth cream-colored paste by stirring in the flour. Gradually pour in the milk while stirring constantly until it reaches a rolling boil. Continue to stir for an additional minute. Remove from heat and set aside.
  • Once the macaroni is cooked, arrange half of it in the bottom of a lightly greased 9x13-inch baking dish. Layer half of the grated onion, salt, pepper, and cheeses. Repeat with another layer of macaroni, onion, salt, pepper, and cheeses. Pour the reserved white sauce over the layers and add small pats of butter to taste.
  • Bake covered at 350°F (175°C) for 45 minutes.
