Southern spoon bread with cornmeal for extra moistness.
Ingredients:
  • 1.25 cups yellow cornmeal
  • 3 eggs, beaten
  • 3 cups milk
  • 1 teaspoon salt
  • 1.75 teaspoons baking powder
  • 2 tablespoons butter, melted
Instructions:
  • In a saucepan, bring milk to a boil. Add cornmeal and stir until it absorbs all the milk. Remove from heat and let it cool for an hour until very stiff.
  • Preheat your oven to 375 degrees F (190 degrees C) and lightly grease a 1 1/2-quart casserole dish.
  • Transfer the cornmeal mixture to a spacious bowl. Mix in eggs, salt, baking powder, and butter. Finally, pour everything into the casserole dish.
  • Bake in a preheated oven for 35 minutes, or until edges are lightly toasted. Serve hot from the dish with a spoonful.
