Savory Olive Crostini: Baguette slices adorned with flavorful olive, garlic, and cheese spread, then oven-toasted. Ideal for effortless party gatherings!
Ingredients:
  • 1/2 cup black olives, pitted
  • 1/2 cup green olives with pimientos
  • 2 medium cloves garlic
  • 1/2 cup fresh grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons butter
  • 1/2 cup Monterey jack cheese, grated
  • 1/4 cup fresh parsley, chopped
  • 1 baguette
Instructions:
  • Prepare the olive mixture: Pulse the olives in a food processor until chopped. Transfer to a medium bowl. While the processor is on, drop garlic through the feed tube to mince. Add Parmesan, butter, and olive oil, and blend into a paste. Combine the butter mixture with the chopped olives in the bowl. Gently mix in jack cheese and parsley.
  • Generously spread the olive mixture on thin slices of baguette.
  • Place the dish under the broiler until bubbly and lightly browned, which should take about 2 minutes. Serve immediately after removing from the oven. For best results, prepare the olive mixture beforehand and spread it on the dish just before broiling.
