Festive pumpkin oatmeal cookies with optional chocolate chips and raisins - a holiday must-have!
Ingredients:
1cupbutter, room temperature
1cupwhite sugar
1cup packed brown sugar
2eggs
1teaspoonvanilla extract
2cups all-purpose flour
1.5 teaspoons pumpkin pie spice
1teaspoonbaking soda
1teaspoonsalt
3cups quick-cooking oats
0.5 cupchocolate chips, or to taste
0.5 cupraisins, or to taste
Instructions:
Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet by lining it with parchment paper.
Using an electric mixer, combine butter, white sugar, brown sugar, eggs, and vanilla extract in a bowl until smooth and creamy. In a separate bowl, sift flour, pumpkin pie spice, baking soda, and salt together. Gradually add the flour mixture to the butter mixture, folding in about 1/4 cup at a time until well combined. Mix in oats, chocolate chips, and raisins. Spoon rounded dough onto the prepared baking sheet.
Bake the cookies in the preheated oven for 7 to 9 minutes, until lightly browned on the bottom and sides. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
