One-pot orecchiette pasta with spicy sausage, arugula, and Parmesan for a delicious and simple meal.
Ingredients:
  • 0.5 onion, diced
  • salt to taste
  • 8 ounces spicy Italian sausages, casings removed
  • 3.5 cups low-sodium chicken broth, divided, or as needed
  • 1.25 cups orecchiette pasta, or more to taste
  • 0.5 cup roughly chopped arugula, or to taste
  • 0.25 cup finely grated Parmigiano-Reggiano cheese, or to taste
Instructions:
  • In a large, deep skillet over medium heat, warm olive oil. Sauté onion with a pinch of salt until soft and translucent, approximately 5 minutes. Add sausage and cook until browned, about 5 to 7 minutes.
  • Add 1 1/2 cups of chicken broth into the sausage mixture and bring to a boil, while deglazing the pan with a wooden spoon. Stir in orecchiette pasta and continue cooking and stirring in the hot broth. Add more broth as needed until the pasta is cooked through and absorbed, around 15 minutes.
  • Mix the arugula into the sausage-pasta until the arugula wilts. Serve the pasta in bowls and top with Parmigiano-Reggiano cheese.
