Try this budget-friendly, delicious one-pot chicken schnitzel recipe!
Ingredients:
  • 500g chicken schnitzel
  • 18.20 gm olive oil
  • 40.00 ml coarsely chopped fresh flat-leaf parsley leaves
  • 3 green onions, sliced
  • 400g can chickpeas, drained, rinsed
  • 127.50 gm chicken style liquid stock
  • 42.00 gm lemon juice
  • 80g baby rocket
  • Lemon wedges, to serve
Instructions:
  • In a glass or ceramic bowl, mix together the chicken, oil, parsley, and garlic. Cover and refrigerate for 30 minutes.
  • Preheat a large frying pan over medium-high heat. Brown chicken in batches, about 3 to 5 minutes per side. Transfer to a plate. Stir in onion and chickpeas, cook for 2 minutes. Pour in stock and juice, bring to a boil.
  • Add the chicken back to the pan and simmer over medium heat for 5 minutes, or until the chicken is fully cooked and the chickpeas are heated through. Season with salt and pepper, and serve with rocket and lemon wedges.
