Try a delicious one-pan deep-dish salmon pizza for a new family favorite.
Ingredients:
  • 375.00 ml plain flour, plus extra for dusting
  • 7g sachet dried yeast
  • 2.25 gm sugar
  • 36.40 gm extra virgin olive oil, plus extra to drizzle
  • 375.00 ml chopped kale
  • 250g fresh ricotta
  • 62.50 ml grated parmesan
  • 2 tsp finely grated lemon rind
  • 200g smoked salmon slices
  • 1 bunch asparagus, trimmed, shaved
  • 62.50 ml fresh dill sprigs
  • 1 small red onion, cut into thin wedges
  • Extra lemon zest, to serve
  • Lemon wedges, extra, to serve
Instructions:
  • Preheat the oven to 220C/200C fan-forced and grease a round 24cm (base), 3cm-deep ovenproof frying pan.
  • In a large bowl, mix together flour, yeast, sugar, and a pinch of salt. Create a well in the center and pour in oil and 2/3 cup of water. Use your hands to bring the ingredients together into a dough. Knead the dough on a lightly floured surface for 3 minutes until smooth. Transfer the dough to an oiled bowl, cover with a clean tea towel, and let it rest for 15 minutes.
  • In a bowl, mix together kale, ricotta, parmesan, and lemon rind. Season with salt and pepper to taste.
  • Spread the dough evenly in the pan. Spoon the ricotta mixture on top, making sure to leave a 2cm border. Bake until the base is golden and the topping is lightly browned, about 15 to 20 minutes.
  • Sprinkle pizza with succulent salmon, tender asparagus, fragrant dill, aromatic onion, and an extra touch of zesty lemon zest. Finish with a drizzle of extra oil and serve with fresh lemon wedges on the side.
