Effortlessly delicious one-pan meal: fragrant fluffy rice, steamed fish, juicy cherry tomatoes, and flavor-packed tapenade.ycopener.
Ingredients:
  • 300 g white basmati rice
  • 6 heaped teaspoons green olive tapenade
  • 350 g ripe mixed-colour cherry tomatoes
  • ½ a bunch of fresh basil (15g)
  • 500 g white fish fillets such as haddock, skin off, pin-boned, from sustainable sources
Instructions:
  • Mix rice with 2 heaped teaspoons of tapenade in a large shallow casserole pan over high heat. Pour in 600ml of water and cover. While it comes to a boil, halve tomatoes and toss in a bowl with 1 tablespoon each of olive oil and red wine vinegar. Season with sea salt and black pepper, add most of the basil leaves. Cut fish into four pieces and nestle them into the rice. Top with dressed tomatoes, cover, and cook for 10 minutes until rice is done. Uncover and cook for 2 more minutes until liquid evaporates. Finish by spreading remaining tapenade over fish, garnishing with basil, drizzling with olive oil, and serving.
