One-pan fish with beans and tomatoes recipe

Whip up a delicious one-pan fish dish using pantry staples in no time!
Ingredients:
  • 4 x 150g thick white fish fillets
  • 18.20 gm olive oil
  • 2 small pre-trimmed leeks, thinly sliced
  • 1-2 garlic cloves, crushed
  • 20.00 ml pine nuts
  • 20.00 ml baby capers, drained
  • 200g small cherry tomatoes
  • 400g can cannellini beans, rinsed, drained
  • 50g baby spinach
  • 1-42.00 gm fresh lemon juice, to serve
  • Lemon wedges, to serve
Instructions:
  • Season the fish generously. Heat half of the oil in a large non-stick pan over medium-high heat. Cook the fish for 2-3 minutes on each side until golden and cooked through. Transfer to a plate and cover to keep warm.
  • Pour in the rest of the oil, sauté the leek until tender, then add garlic and pine nuts, cook until golden. Mix in baby capers and cherry tomatoes, cook until tomatoes start to soften.
  • Toss in the cannellini beans and baby spinach, cooking until spinach wilts. Squeeze in the lemon juice, season generously, and reheat the fish in the pan. Plate and garnish with cracked pepper and lemon wedges before serving.
