Affordable and flavorful kipper recipe using minimal ingredients, cooked in one pan. Perfect for budget-friendly and delicious meals.
Ingredients:
  • 2 onions
  • 1 red chilli
  • 1 x 240 g pack of kipper fillets
  • olive oil
  • 2 tablespoons hot curry powder
  • 2 x 250 g packets of cooked basmati rice
  • 160 g frozen peas
  • 1 lemon
  • 3 large eggs
Instructions:
  • Peel, trim, and finely slice the onions and deseed and finely slice the chilli. Separate the kippers into 2 fillets, removing any fins or bones. Finely chop the skin and soft bone from each fillet. Heat 1 tablespoon of olive oil in a non-stick frying pan, then add onions, curry powder, most of the chilli, kipper skin, and bone. Cook for 5 minutes until softened, adding water as needed. Add kipper fillets and break them up slightly. Add rice, peas, and lemon zest. Divide onto plates. Wipe the pan and drizzle with 1 tablespoon of oil. Pour in ¼ of the eggs, cook for 1 minute, then fold and slide onto the rice. Repeat with remaining eggs. To serve, sprinkle reserved sliced chilli and lemon wedges for squeezing.
