Try this quick and delicious Margherita rice bake, a twist on the classic pizza using fluffy white rice instead of dough. Ingredients:
  • 18.20 gm extra virgin olive oil
  • 6 garlic cloves, thinly sliced
  • 510g jar Simply Tomato & Basil Pasta Sauce
  • 1 tsp vegetable stock powder
  • 3 x 250g packets Microwave White Long Grain Rice
  • 155g (1 1/2 cups) coarsely grated mozzarella
  • 250g vine-ripened cherry truss tomatoes, cut into small bunches
  • 62.50 ml fresh basil leaves
Instructions:
  • Preheat the oven grill on high temperature.
  • In an ovenproof frying pan, heat oil over medium heat. Sauté garlic until lightly golden, about 1 minute. Add pasta sauce and stock powder, stirring to combine. Bring to a simmer.
  • Place the rice in the pan and stir until heated and well mixed with seasoning. Sprinkle cheese over the top and layer with tomatoes. Season with salt and pepper, then grill until cheese is golden and bubbly. Finish with a sprinkle of fresh basil before serving.
