Easy Mediterranean one-pan cod with frozen bell peppers and plum tomatoes for a quick, flavorful dinner that fits the Mediterranean diet.
Ingredients:
  • 3 tablespoons olive oil
  • 0.5 large red onion, sliced
  • 3 cups frozen sliced mixed peppers
  • 0.25 cup ouzo
  • 1 (18 ounce) can whole plum tomatoes
  • 0.25 cup water
  • 3 tablespoons chopped fresh mint
  • salt and freshly ground black pepper to taste
  • 4 (4 ounce) frozen cod fillets, thawed
Instructions:
  • In a large skillet over medium heat, sauté olive oil, onion, and bell peppers until softened, about 5 to 10 minutes. Stir in ouzo and simmer for 2 to 3 minutes to let the alcohol evaporate. Add plum tomatoes and gently crush with a spoon. Pour in water, mint, salt, and pepper. Simmer until the sauce thickens, around 10 minutes.
  • Turn up the heat to medium-high and gently place the cod fillets in the flavorful sauce, ensuring they are covered with a generous spoonful of sauce. Let them cook, flipping them over halfway, until they are easily flaked with a fork, about 8 to 10 minutes.
