One-pan nasi goreng prawn rice bake recipe

Flavorful Indonesian fried rice with shrimp paste, chili, and garlic for a quick and easy one-pan meal on busy weeknights.
Ingredients:
  • 60ml (1/4 cup) vegetable oil
  • 500g peeled green prawns, deveined, tails intact
  • 1 brown onion, finely chopped
  • 1 long fresh red chilli, thinly sliced
  • 2 garlic cloves, finely chopped
  • 300g green beans, thinly sliced
  • 6.10 gm shrimp paste (find in Asian aisle at the supermarket)
  • 700g packet microwave jasmine rice
  • 50.00 ml kecap manis, plus extra, to serve
  • 50.00 ml tamari
  • 1 tsp Stock Powder Chicken Style
  • 4 eggs
  • Green shallots, thinly sliced diagonally, to serve
  • Sambal oelek, to drizzle
Instructions:
  • Preheat your oven to 200C/180C fan forced. Heat 1 tablespoon of oil in a 5cm-deep, 25 x 35cm flameproof roasting pan over medium-high heat. Sear the prawns for 2 minutes until they turn golden, then transfer them to a bowl.
  • Lower the heat to medium, then add the onion, chili, and remaining oil to the pan. Sauté for 5 minutes until the onion softens. Stir in the garlic and cook for an additional minute until fragrant. Toss in the green beans and cook for about 3 minutes until they are tender-crisp. Mix in the shrimp paste, using a wooden spoon to break it up, and cook for 1 minute until well combined and aromatic. Finally, take the pan off the heat.
  • Combine rice, kecap manis, tamari, and stock powder in a pan. Stir to coat the rice evenly. Mix in water, then bake in the oven for 10 minutes.
  • 1. Mix the prawns into the rice until evenly incorporated. Create 4 wells in the rice mixture. Crack an egg into each well. Bake for 8-10 minutes until the eggs are set and the rice is crispy on the edges.
  • Sprinkle the rice bake with shallots, spicy sambal oelek, and a drizzle of extra sweet kecap manis before serving.
