One-pan paneer and spinach tikka masala recipe

Creamy and flavorful Indian tikka masala with paneer, ready in under an hour.
Ingredients:
  • 40g butter
  • 2 x 200g packets paneer, cut into 3cm pieces
  • 1 brown onion, chopped
  • 2 garlic cloves, crushed
  • 87.50 gm tikka masala curry paste
  • 1/2 tsp ground turmeric
  • 1/2 tsp fennel seeds
  • 1 cinnamon stick
  • 400g can diced tomatoes
  • 255.00 gm vegetable liquid stock
  • 120g baby spinach
  • 40.00 ml chopped fresh coriander
  • Coriander sprigs, to serve
  • Plain Greek-style yoghurt, to serve
  • Warmed naan bread, to serve
Instructions:
  • In a large, deep frying pan over medium heat, melt half of the butter. Cook paneer for 1 to 2 minutes on each side until lightly browned. Then, transfer to a plate.
  • In a pan over medium heat, melt the rest of the butter, then add the onion. Stir and cook for 5 minutes until golden. Lower the heat and stir in the garlic, curry paste, turmeric, fennel, and cinnamon for 30 seconds until fragrant. Pour in the tomatoes and stock, bring to a boil, then simmer on low for 15 minutes until thickened. Add the spinach and coriander, and cook for an additional 3 minutes until the spinach wilts.
  • Place the paneer back into the pan and heat for 1 to 2 minutes until warmed. Sprinkle with additional coriander. Enjoy with yogurt and fresh naan.
