30-Minute Smoky, Spicy One-Pot Veggie Delight - A Healthy Weeknight Hit!
Ingredients:
  • 2.50 gm smoked paprika
  • 1 tsp dried oregano leaves
  • 1⁄4 tsp dried chilli flakes
  • 2 (about 500g) chicken breast fillets, halved horizontally
  • 18.20 gm extra virgin olive oil
  • 2 small zucchini, sliced
  • 175g mini capsicums, deseeded, halved
  • 22.20 gm no-added-salt tomato paste
  • 400g can cherry tomatoes
  • 2 tsp white balsamic condiment
  • 140g (2⁄3 cup) wholemeal couscous
  • 160ml (2⁄3 cup) boiling water
  • 250g green beans, steamed, halved lengthways
  • Lime wedges, to serve
Instructions:
  • Mix together paprika, cumin, oregano, and chili. Season the chicken generously with the spice mixture.
  • In a large non-stick frying pan, heat half of the oil over high heat. Sear the zucchini slices for 1-2 minutes per side until golden. Transfer to a plate. Then add the chicken to the pan and cook for 2-3 minutes per side until browned and almost cooked through. Transfer to a plate.
  • In a pan over medium heat, warm the remaining oil. Add capsicum and cook for 2 minutes until it starts to soften, stirring occasionally. Mix in the tomato paste, followed by the tomatoes and 125ml (1 ⁄2 cup) water. Bring it to a boil, then lower the heat to simmer for 6-7 minutes until slightly reduced. Lastly, add the chicken, zucchini, and balsamic. Simmer for an additional 5 minutes until the chicken is fully cooked.
  • Combine couscous and boiling water in a heatproof bowl and set aside covered for 3-4 minutes to absorb. Fluff with a fork.
  • Plate the couscous and chicken, then generously season them. Serve alongside the beans and a squeeze of fresh lime for a burst of flavor.
