One-pan prosciutto-wrapped salmon

Try a vibrant one-pan salmon and veggie bake for a simple, nutritious meal.
Ingredients:
  • 40.00 ml chopped fresh rosemary, plus 4 extra sprigs
  • 2 garlic cloves, sliced
  • 700g baby Carisma potatoes, sliced thickly
  • 2 bunches broccolini, trimmed
  • 200g Brussels sprouts, halved
  • 1 large red onion, cut into wedges
  • 4 x 200g salmon fillets with skin
  • 35g sachet chimichurri finishing drizzle
  • 4 slices prosciutto
  • 200g vine-ripened cherry truss tomatoes
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and line a large baking tray with baking paper.
  • Mix together the chopped rosemary, garlic, and oil in a large bowl. Season with salt and pepper, then add the potato, broccolini, Brussels sprouts, and onion. Toss everything together until well coated, then transfer to a prepared baking tray.
  • Cover the salmon generously with flavorful chimichurri sauce, then garnish with fragrant rosemary. Wrap each salmon fillet in a savory slice of prosciutto. Arrange the salmon and tomato on a bed of vegetables on a baking tray. Roast in the oven for 25 to 30 minutes (refer to note) until the vegetables are tender and the salmon is perfectly cooked. Serve with a side of lemon wedges.
