One-pan Thai coconut chicken and rice recipe

Quick and flavorful Thai coconut chicken ready in just 20 minutes.
Ingredients:
  • 18.40 gm vegetable oil
  • 2 Free Range Chicken Breasts, thickly sliced on an angle
  • (1/2) 450g pkt Thai green curry Sauce (cook-in)
  • 2 x 250g packets 90-second microwave coconut rice
  • 450g packet frozen steam fresh beans, broccoli, sugar snap peas (see note)
  • 125.00 ml fresh coriander sprigs
Instructions:
  • In a large, deep frying pan over high heat, heat oil until shimmering. Add chicken and fry for 2 to 3 minutes until golden brown on all sides. Pour in 1/2 cup of curry sauce and simmer for 3 to 4 minutes until the sauce thickens and the chicken is fully cooked. Serve on a plate.
  • Transfer the remaining sauce to a small microwave-safe bowl and heat on HIGH for 20 to 30 seconds, or until warmed through.
  • Next, toss the rice and vegetables into the pan. Stir and cook for 2 to 3 minutes until everything is heated through. Add the chicken on top and drizzle with the remaining sauce. Serve with a sprinkle of fresh coriander.
