Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, halved, thinly sliced
  • 2 carrots, peeled, cut into 1cm pieces
  • 2 celery sticks, trimmed, cut into 1cm pieces
  • 2 garlic cloves, crushed
  • 510g jar Simply Tomato & Basil Pasta Sauce
  • 2 chicken-style stock cubes, crumbled
  • 125g curly lasagne sheets
  • ½ x 500g pkt diced butternut pumpkin
  • 420g can lentils, drained, rinsed
  • 425g tub fresh creamy cheese pasta sauce
  • 100g (1 cup) Pizza Blend Shredded Cheese
Instructions:
  • In a 6cm-deep, 25cm ovenproof dish, heat oil over medium-high heat. Add onion, carrot, and celery, cook until soft for 3-4 minutes. Add garlic, cook until aromatic for 1 minute. Stir in pasta sauce, stock cubes, and 750ml water, bring to a simmer.
  • Break lasagne sheets into 6cm pieces and mix with the pumpkin. Cook covered on medium heat for 10 minutes until pumpkin and pasta are tender. Add the lentils and stir.
  • Preheat an oven grill to medium-high. Blanket the pasta mixture with cheese sauce, then sprinkle with pizza cheese. Grill for 5 minutes or until the cheese is golden and bubbling. Serve and enjoy!
