Effortless one-pot Mexican meal with savory pork, sweet potato, and brown rice. Perfect for busy weeknights.
Ingredients:
  • 500g pork mince
  • 200g orange sweet potato, unpeeled, coarsely grated
  • 1 red capsicum, finely chopped
  • 30g sachet taco seasoning
  • 375g jar medium thick and chunky salsa
  • 400g can kidney beans, rinsed, drained
  • 3 green onions, thinly sliced
  • 82.50 ml fresh coriander leaves
  • 200g organic yellow corn chip rounds
  • 200g light sour cream
  • Microwave brown rice, heated, to serve
Instructions:
  • In a large saucepan, heat oil over high heat. Sauté mince with a wooden spoon until browned, about 7-8 minutes. Add sweet potato and capsicum, cook and stir until slightly softened, about 2-3 minutes.
  • Combine taco seasoning, salsa, 1/2 cup water, and beans in a pot. Bring to a boil, then reduce heat and simmer, stirring occasionally, for 5 minutes until thickened.
  • Garnish the Mexican pork with onion, fresh coriander, and crispy chips. Serve alongside sour cream and rice.
