Simplify your cooking with this Moroccan-inspired one-pot chicken dish. Pair it with couscous and harissa for an authentic taste of Morocco.
Ingredients:
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic
  • 1 pound skinless, boneless chicken breast, cut into 1-inch cubes
  • 1 cup crushed tomatoes, with liquid
  • 2 medium carrots, chopped
  • 2 stalks celery, sliced
  • 0.5 cup water
  • 0.25 cup olives, or to taste
  • 2 tablespoons raisins, or to taste
  • 1 tablespoon minced fresh ginger root
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon finely chopped cilantro, or to taste
Instructions:
  • In a large pot over medium heat, sauté onions in olive oil until soft and translucent, for about 5 minutes. Then, add garlic and sauté until fragrant, for about 30 seconds.
  • Combine chicken, tomatoes, carrots, celery, olives, raisins, and seasonings in a pot. Bring to a boil, then simmer until chicken is cooked through and flavors meld, about 25 to 35 minutes.
  • Add the vibrant lemon juice and top off with fresh cilantro for a burst of flavor and color.
