Easy one-pot Spanish chicken and yellow rice for simple weeknight dinners.
Ingredients:
  • 1 onion, chopped
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 pound skinless, boneless chicken breasts, cut into large chunks
  • 2.3333332538605 cups water
  • 0.5 (16 ounce) package yellow rice (such as Vigo®)
  • 0.66666668653488 cup frozen peas
Instructions:
  • In a large pot over medium heat, sauté onion, olive oil, and garlic for 2 minutes. Add chicken breasts and cook until lightly browned on each side, about 2 minutes. Pour in water and bring to a boil.
  • Add the vibrant yellow rice to the bubbling pot. Allow it to gently simmer over medium heat until the chicken and rice are tender, approximately 20 minutes. Sprinkle the frozen peas over the top and let them cook until thawed, which should take around 2 minutes. Give the rice a good mix.
