20-minute one-pot sticky salmon with fresh navel oranges for a fast and flavorful weeknight dinner.
Ingredients:
  • 4 x 200g skinless salmon fillets
  • 2 garlic cloves, crushed
  • 5.00 gm cornflour
  • 1 tsp fennel seeds
  • 84.15 gm chicken stock
  • 131.25 gm fresh navel orange juice
  • 84.38 gm maple syrup
  • 1 bunch asparagus, trimmed, halved
  • 2 x 250g packets microwave brown rice and quinoa mix
  • 1 navel orange, halved, very thinly sliced
  • Fresh mint leaves, to serve
Instructions:
  • Season the salmon generously with salt and pepper. Heat oil in a large frying pan over medium-high heat, then add the salmon. Sear each side for 3 minutes or until beautifully browned.
  • In a medium jug, mix together cornflour, garlic, fennel seeds, stock, orange juice, and maple syrup. Season with salt and pepper. Pour maple mixture into the pan and sprinkle with asparagus. Cook until salmon reaches desired doneness and sauce thickens, about 4 minutes.
  • Cook rice mix according to package instructions.
  • Lay orange slices over salmon, then scatter with fresh mint. Serve alongside a flavorful rice blend.
