In a large saucepan over medium heat, combine the stock, soy sauce, and 1 cup of cold water. Cover and bring to a simmer.
Combine minced meat, green onion, corn, and oyster sauce in a bowl. Take a wonton wrapper and place a heaped teaspoon of the minced meat mixture in the center. Brush the edges with water, fold up the sides to create a pouch, and pinch to seal. Place the filled wontons on a plate and repeat the process with the rest of the wrappers and mixture.
1. Drop the wontons into the gently simmering stock. Let them cook for 5 minutes uncovered. Add in the noodles and snow peas. Cook for an additional 2 minutes or until the noodles are tender and the wontons rise to the top. Serve the soup in bowls and garnish with fresh coriander.
