Elevate a basic chicken dish into an extraordinary culinary masterpiece.
Ingredients:
  • 2 (1.2kg each) whole chickens
  • 100g butter, at room temperature
  • 82.50 ml pistachio kernels, finely chopped
  • 20.00 ml finely-grated orange rind
  • 2 tsp chopped fresh sage
  • olive oil cooking spray
Instructions:
  • Rinse chickens under cold water, then gently dry with a paper towel. Use kitchen scissors to cut along both sides of the backbones and remove them. Flatten chickens by pressing down on a flat surface.
  • Mix together the butter, pistachios, orange rind, and sage in a bowl. Gently loosen the chicken breast skin from the flesh using your fingers, then stuff the butter mixture underneath the skin.
  • Prepare the barbecue plate or chargrill with a light coating of oil and heat on high. Place the chicken, skin side down, and cook for 10 minutes until golden brown. Flip the chicken and cover with a barbecue hood or roasting pan for 40 minutes, or until juices run clear when tested with a skewer. Transfer the chicken to plates, let it rest for 10 minutes, then slice into portions and serve.
