Orange and fennel fish

Ingredients:
  • 2 medium oranges
  • 2 tsp fennel seeds
  • 36.40 gm olive oil
  • 4 (150g each) firm white fish fillets
  • 70g baby spinach
  • 1 small fennel bulb, trimmed, thinly sliced
  • 40.00 ml red wine vinegar
Instructions:
  • Grate the zest from the oranges, keeping the oranges for later. Mix the orange zest, fennel seeds, and half of the oil in a shallow glass or ceramic dish. Add the fish and coat it evenly. Allow it to marinate for 10 minutes.
  • Preheat a barbecue plate or chargrill over medium-high heat. Grill fish for 3 to 5 minutes on each side until golden brown and fully cooked. Remove to a serving plate.
  • Segment oranges into a bowl according to the note. Mix in spinach, sliced fennel, vinegar, and the rest of the oil. Toss ingredients together. Divide onto plates and place fish on top. Serve.
