Ingredients:
  • 4 oranges
  • 1 bunch radishes, washed, trimmed, thinly sliced
  • 20.00 ml chopped fresh chives
  • 18.20 gm olive oil
  • Pinch of caster sugar
  • 2 witlof, leaves separated, washed, dried
Instructions:
  • Juice one orange and set aside 2 tablespoons. Peel and remove the white pith from the remaining oranges. Cut the oranges into segments by slicing close to the membrane on each side with a sharp knife.
  • Combine the orange segments, radishes, and chives in a large bowl and toss together.
  • In a small jug, combine oil, sugar, and reserved orange juice. Season with salt and pepper to taste. Pour the flavorful dressing over the orange mixture, toss gently to mix well. Serve the witlof on plates and top with the zesty orange mixture.
