Tangy orange pork - a simple and tasty dinner option.
Ingredients:
  • 2kg-piece pork forequarter
  • 125ml (1/2 cup) fresh orange juice
  • 170g (1/2 cup) orange marmalade
  • 60ml (1/4 cup) sweet sherry
  • 4 whole star anise
  • Steamed vegetables, to serve
Instructions:
  • Preheat your oven to 160°C. Place the pork in a glass or ceramic baking dish. Mix together orange juice, marmalade, sherry, and star anise in a jug. Pour the mixture over the pork, ensuring it is well coated. Cover and refrigerate for 1 hour to enhance the flavors.
  • Cover and roast in the oven for 2 1/2 hours until tender. Uncover and roast for an additional 30 minutes until golden brown. Remove from oven and let it rest for 15 minutes.
  • Drizzle the pan juices over the pork and serve alongside the steamed vegetables.
