Impress guests with this light and creamy angel food cake trifle featuring Mandarin oranges.
Ingredients:
  • 0.25 cup orange juice
  • 3 eggs, lightly beaten
  • 0.5 cup white sugar
  • 0.25 cup cold butter, cubed
  • 1 cup whipping cream, whipped to soft peaks
  • 1 (10 inch) angel food cake, cut in cubes
  • 2 (15 ounce) cans Mandarin oranges, drained and patted dry
Instructions:
  • In a small saucepan, combine orange juice, eggs, and sugar. Cook over low heat, stirring constantly until the sugar dissolves and the mixture thickens. Strain into a large bowl, add butter cubes, and mix until melted. Chill in the refrigerator for about 2 hours.
  • Gently mix whipped cream into chilled egg mixture until silky. Cover and chill in the refrigerator for 3 hours.
  • Begin by layering half of the cubed angel food cake at the base of a trifle bowl, followed by half of the whipped cream mixture and half of the Mandarin oranges. Repeat the layers with the remaining angel food cake, whipped cream mixture, and Mandarin oranges. Chill in the refrigerator until you're ready to indulge.
