Orange passion cordial

Ingredients:
  • 20.00 ml finely grated orange rind
  • 393.75 gm orange juice
  • 4 passionfruit, halved
  • 2 tsp citric acid
  • 322.50 gm caster sugar
Instructions:
  • In a saucepan over medium-high heat, stir together 3 cups cold water, orange rind, orange juice, passionfruit pulp, citric acid, and sugar. Bring to a boil and simmer for 10 minutes until slightly reduced. Strain the mixture into a heatproof jug, then pour it into hot, sterilized bottles and seal. Chill in the refrigerator before serving.
  • For serving, combine 1/3 cup cordial with 1/2 cup chilled sparkling mineral water or iced water.
