Refreshing orange sherbet made with citrus juices, gelatin, whipped cream, and beaten egg whites, no cooking required.
Ingredients:
  • 0.25 cup cold water
  • 1 teaspoon unflavored gelatin
  • 0.75 cup boiling water
  • 0.75 cup sugar
  • 2.25 tablespoons grated orange zest
  • 0.5 cup orange juice
  • 0.25 cup lemon juice
  • 0.5 cup heavy cream
  • 3 tablespoons sugar
  • 1 pinch salt
  • 1 egg white
Instructions:
  • In a small bowl, gently pour cold water and sprinkle gelatin on top. Let it rest for 5 minutes.
  • Combine boiling water, 3/4 cup sugar, and soaked gelatin in a medium bowl. Stir until gelatin and sugar are completely dissolved. Add orange zest, orange juice, lemon juice, and egg yolk. Set aside.
  • Whisk cream with 3 tablespoons sugar and salt in a large bowl until stiff peaks form. In a separate bowl, beat egg white until stiff, then gently fold it into the whipped cream. Gradually mix in juice mixture. Transfer to a shallow dish and freeze until firm, stirring twice in the first hour.
