Experience a luxurious high tea tradition!
Ingredients:
  • 125g butter, softened
  • 215g caster sugar
  • 3 eggs
  • 20.00 ml finely grated orange rind
  • 120.00ml orange juice
  • 55g almond meal
  • 75g self-raising flour
  • 40g plain flour
  • 60g sour cream
  • 110g white sugar
  • Finely grated orange rind, extra, to serve
Instructions:
  • Preheat the oven to 160°C. Grease 12 pans with a 1/2-cup (125ml) capacity for loaf, muffin, or friand, and place them on an oven tray.
  • In a bowl, cream the butter and sugar with an electric mixer until pale and creamy. Incorporate eggs one at a time, ensuring each is well mixed in. Finally, add orange rind and juice, stirring until combined.
  • Combine almond meal, flour, and sour cream until fully incorporated. Divide the mixture among the prepared pans and level the surface. Bake in a preheated oven for 20 minutes or until a skewer inserted in the center comes out clean. Invert onto a wire rack to cool.
  • Drizzle each warm cake with the additional orange juice, generously sprinkle with sugar, and garnish with orange zest, if preferred. Allow them to cool to perfection.
