Orchard Date-Apricot Bars

Wholesome date-apricot filled dessert bars from Betty Crocker's Heart Healthy Cookbook.
Ingredients:
  • 1 1/4 cups dates (8 ounces pitted)
  • 1 1/2 cups dried apricots, cut-up (8 ounces)
  • 1 1/2 cups water
  • 1 cup packed brown sugar
  • 3/4 cup canola or soybean oil
  • 3/4 cup Gold Medal™ all-purpose flour
  • 1 cup plus 2 tablespoons ground flaxseed or flaxseed meal
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups quick-cooking oats
Instructions:
  • In a medium saucepan, combine all filling ingredients and stir until smooth. Cook over medium-low heat, stirring continuously, until the mixture thickens, approximately 10 minutes. Allow the filling to cool completely before using.
  • Preheat your oven to 400°F and generously spray a 13x9x2-inch rectangular pan with cooking spray.
  • In a large bowl, combine brown sugar and oil, then add the rest of the ingredients until a moist, crumbly mixture forms. Press half of the crumbs evenly into the bottom of the pan. Spread the date-apricot filling over the base and sprinkle with the remaining crumb mixture, pressing lightly.
  • Bake 25-30 minutes until lightly golden. Let cool in pan on wire rack for about 1 hour. Cut into 36 bars.
