Orecchiette with Fresh Tomatoes and Sausage

Whip up a delectable orecchiette pasta dish with juicy tomatoes, savory chicken sausage, crispy pancetta, earthy mushrooms, and fragrant basil for a satisfying dinner.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 1 small onion, minced
  • 3 cloves garlic, minced
  • 1 (4 ounce) package chopped pancetta
  • 1 (12 ounce) package Italian chicken sausage (such as Trader Joe's® Chicken Sicilian Sausage)
  • 0.33333334326744 cup red wine
  • 1 (8 ounce) package crimini mushrooms, sliced
  • 20 cherry tomatoes, halved, or more to taste
  • 3 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • salt to taste
  • 1 (16 ounce) package orecchiette pasta
  • 1 cup chopped baby spinach
Instructions:
  • In a large skillet over medium heat, melt butter with oil. Add onion and garlic, stirring occasionally until onion begins to soften, approximately 2 minutes.
  • Turn up the heat to high and toss in the pancetta. Cook and stir until crispy, about 3 to 5 minutes. While the pancetta cooks, remove sausages casings. Add the sausage meat to the skillet and cook until browned, also for about 3 to 5 minutes. Pour in the wine and deglaze the skillet by scraping up any flavorful bits from the bottom.
  • Place mushrooms in the skillet and sauté until slightly softened, about 5 to 10 minutes. Mix in tomatoes, basil, oregano, and salt. Lower the heat, cover, and let simmer until the sauce thickens, around 1 to 2 hours, stirring occasionally.
  • Fill a large pot with salted water and bring it to a rolling boil. Add orecchiette and cook until al dente, about 7 minutes. Reserve 1/2 cup of cooking water before draining the pasta without rinsing.
  • Combine fresh spinach with the savory sauce in the skillet, cooking until beautifully wilted in just about a minute. Next, swiftly toss the pasta into the skillet, ensuring everything is well mixed. Heat through while stirring, and if the sauce appears too thick, add a bit of the saved pasta water.
