"Juicy chicken wrapped in foil for maximum flavor."
Ingredients:
  • 4 (about 1kg) chicken marylands
  • 250ml white wine
  • 4 ripe tomatoes, seeded, finely chopped
  • 160g olive
  • 40.00 ml drained capers
  • 2 garlic cloves, thinly sliced
  • 62.50 ml fresh oregano leaves
  • 125ml chicken stock
Instructions:
  • 1. Preheat your oven to 200°C. 2. Season the chicken generously with salt and pepper. 3. In a large frying pan over high heat, heat oil until shimmering. 4. Add the seasoned chicken and sear for 3-4 minutes per side until golden brown. 5. Pour in the wine and let it simmer for 2 minutes until slightly reduced. 6. Remove the pan from the heat and your dish is ready to serve.
  • Cut four 40cm squares of foil. Place chicken in the center of each. Combine tomato, olives, capers, garlic, and oregano in a bowl. Season with salt and pepper. Spoon mixture over chicken. Add pan juices and chicken stock.
  • Wrap the foil around the filling and place on a baking tray. Bake for 40 minutes or until the chicken is fully cooked. Transfer to serving plates and serve right away.
