Tender beef shank simmers in zesty tomato sauce with herbs for a delicious take on traditional osso bucco.
Ingredients:
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 1 pound beef shank
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried rosemary
  • 0.25 teaspoon dried marjoram
  • 1 (16 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 6 ounces water
  • 1 tablespoon lemon zest
  • 1 teaspoon sea salt
  • 0.5 teaspoon coarsely ground black pepper
Instructions:
  • In a large saucepan over medium heat, warm up the oil. Cook the onion and garlic until softened, which should take about 5 minutes. Then, transfer to a plate.
  • Place the beef shank in the saucepan over medium-high heat and sear until golden brown on each side, approximately 5 minutes. Reintroduce the onion and garlic to the pan, then generously sprinkle thyme, oregano, rosemary, and marjoram over the beef. Add in the tomatoes and tomato paste.
  • Empty the tomato paste can by filling it with water, swirling to loosen any remaining paste, and add it to the saucepan. Mix in lemon zest, salt, and pepper, then bring to a boil. Lower the heat, cover, and simmer until the beef is very tender, about 1 1/2 to 2 hours.
