Tender veal shanks simmered in a savory tomato and vegetable broth, topped with a zesty mix of garlic, parsley, and lemon zest - an irresistible Italian classic, Osso Buco.
Ingredients:
0.25 cupall-purpose flour
2teaspoons salt
2pounds veal shank
3tablespoons butter
3tablespoons olive oil
1cupchoppedonion
1cupthinly slicedcarrots
0.5 cupchoppedcelery
2clovesgarlic, crushed
1 (8 ounce) cantomato sauce
1teaspoondried basil
1teaspoondried thyme
3sprigsfresh parsley
1bay leaf
Instructions:
Combine flour, salt, and black pepper in a shallow dish. Coat the meat with the seasoned flour mixture. Heat butter and oil in a large skillet over medium heat. Sear the meat until browned. Remove the meat from the skillet and set aside.
Sauté onion, carrots, celery, and garlic in the flavorful drippings for 5 minutes, stirring constantly.
Add the tomato sauce, water, basil, thyme, parsley, and bay leaf to the pan. Place the meat back in. Bring to a boil, then simmer covered for 2 1/2 hours.
