Tender veal shanks simmered in a savory tomato and vegetable broth, topped with a zesty mix of garlic, parsley, and lemon zest - an irresistible Italian classic, Osso Buco.
Ingredients:
  • 0.25 cup all-purpose flour
  • 2 teaspoons salt
  • 2 pounds veal shank
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 1 cup chopped onion
  • 1 cup thinly sliced carrots
  • 0.5 cup chopped celery
  • 2 cloves garlic, crushed
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 3 sprigs fresh parsley
  • 1 bay leaf
Instructions:
  • Combine flour, salt, and black pepper in a shallow dish. Coat the meat with the seasoned flour mixture. Heat butter and oil in a large skillet over medium heat. Sear the meat until browned. Remove the meat from the skillet and set aside.
  • Sauté onion, carrots, celery, and garlic in the flavorful drippings for 5 minutes, stirring constantly.
  • Add the tomato sauce, water, basil, thyme, parsley, and bay leaf to the pan. Place the meat back in. Bring to a boil, then simmer covered for 2 1/2 hours.
