Try this speedy, flavorful Chinese vegetable stir-fry recipe - a must for vegetarians! Serve with fluffy white rice for the perfect pairing.
Ingredients:
  • 1 teaspoon cornstarch
  • 1 tablespoon soy sauce
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 1 carrot, sliced
  • 1.3333300352097 cups bean sprouts
  • 0.66666698455811 cup fresh corn kernels
  • 4 green onions, sliced
  • 1 clove crushed garlic
Instructions:
  • In a small bowl, combine water and cornstarch, then stir in olive oil and soy sauce until well mixed. Set aside.
  • In a skillet or wok over medium-high heat, sauté bell pepper, zucchini, and carrot in hot oil for 5 minutes. Add bean sprouts, corn, green onions, and garlic, and stir to combine.
  • Add the soy sauce mixture and cook while stirring until vegetables are tender but still have a satisfying crunch, approximately 5 minutes.
