Savor a classic Japanese favorite, Oyako Donburi, a comforting dish featuring tender chicken and silky eggs in a savory broth.
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.75 pound skinless, boneless chicken breast halves - cut into strips
  • 0.5 onion, thinly sliced
  • 1 cup chicken broth
  • 6 dried shiitake mushrooms, soaked until soft, then sliced into strips
  • 1 carrot, julienned
  • 2 tablespoons white sugar
  • 4 tablespoons soy sauce
  • 0.5 cup chopped green onions
  • 5 eggs, beaten
Instructions:
  • In a large skillet over medium-high heat, sizzle chicken strips and onion in oil until chicken is fully cooked, around 5 to 7 minutes. Remove excess liquid before moving on.
  • Pour in the chicken broth and simmer for 2 minutes. Add mushrooms and carrot, simmer briefly, then mix in sugar, soy sauce, and salt. Let simmer for 3 more minutes. Gently stir in half of the green onions. Pour beaten eggs over the mixture and simmer for approximately 10 minutes until eggs are fully cooked. Serve on top of Japanese sticky rice.
