Rich cashew-cardamom dessert made with milk, sugar, and clarified butter.
Ingredients:
  • 0.25 cup ghee (clarified butter)
  • 0.25 cup cashews
  • 1.5 cups whole milk
  • 3 tablespoons semolina flour
  • 0.5 teaspoon ground cardamom
Instructions:
  • Warm the ghee in a sturdy pan on medium heat. Cook the cashews in the ghee until they turn golden brown, which should take around 5 minutes. Transfer the cashews to a cutting board to cool, keeping some ghee in the pan. Once cooled, roughly chop the cashews.
  • Combine the milk, sugar, and semolina flour with the ghee in the pan. Simmer until thickened, about 30 to 45 minutes, stirring occasionally. Add the cardamom and mix well.
  • Prepare a rimmed platter by lightly greasing it. Spread the milk mixture onto the platter, creating an even layer. Sprinkle the chopped cashews over the mixture. Score the mithai into squares, then let it cool completely before cutting.
