Paccheri with Quick Sausage Ragu

Enjoy fun and flavorful paccheri pasta with quick creamy sausage ragu, ready in just 30 minutes for a perfect weeknight meal.
Ingredients:
1poundpaccheri pasta
1 medium red onion, thinly sliced
4clovesgarlic, thinly sliced
1tablespoonfennel seeds
1teaspoonchili flakes, optional
10 1/2 ounces spicy Italian sausage, casings removed
1/3 cuptomato paste
11/2 tablespoons kosher saltfor salting the pasta water, plus more to taste
11/4 cuppasta water
2/3 cupheavy cream
1/2 teaspoonfreshly gratedblack pepper
Freshly gratedParmesan cheese, for serving
Fresh basil, for serving
Instructions:
Prepare the pasta water by placing a large pot of water over medium-high heat, covering it, and bringing it to a boil.
To begin the ragu, heat olive oil and butter in a large skillet over medium heat. Sauté onion and garlic until onion is translucent, about 5 minutes. Stir in fennel seeds and chili flakes, then add sausage, breaking it up as it cooks until almost done, around 5 minutes. Mix in tomato paste and simmer on low heat, stirring occasionally, while you prepare the pasta.
Add salt to boiling water and cook pasta until al dente, stirring occasionally, for about 8 minutes. Save 1 1/4 cups of pasta water for the ragu before draining the pasta.
Complete the ragu by adding reserved pasta water to the sauce on medium heat until it simmers and thickens. Stir in heavy cream right before the pasta is ready.
Serve the pasta: Transfer the pasta into the pan with the ragu using a slotted spoon. Gently mix to coat the pasta in the sauce. Let it sit until the sauce thickens for about 3 minutes. Remove from heat, taste, adjust salt if necessary, and serve topped with black pepper, freshly grated Parmesan cheese, and basil. Enjoy!
