Delicious chicken pad Thai with rice noodles in a flavorful sweet and tangy sauce made with vinegar, sugar, fish sauce, and red pepper.
Ingredients:
1 (12 ounce) packagerice noodles
1poundboneless, skinless chicken breast halves, cut into bite-sized pieces
0.25 cupvegetable oil
4eggs
3tablespoons white sugar
2tablespoons fish sauce
1tablespoonwhite wine vinegar
0.125 tablespooncrushedred pepper
2cups bean sprouts
3green onions, chopped
0.25 cupcrushedpeanuts
1lemon, cut into wedges
Instructions:
Prepare all your delicious ingredients.
Let rice noodles luxuriate in cold water until tender, for about 30 to 50 minutes. Drain and set aside for the next step.
In a wok, melt butter until sizzling; then cook chicken until beautifully browned. Set aside the chicken for later.
Heat oil in a wok over medium-high heat. Add eggs to the sizzling oil and cook until set. Mix in chicken and cook for 5 minutes.
Combine softened noodles with sugar, fish sauce, vinegar, and red pepper; mix thoroughly until noodles are tender. Taste and adjust seasonings as needed.
Add bean sprouts to the sizzling wok and stir-fry for 3 minutes.
Garnish with green onions, crushed peanuts, and a lemon wedge before serving.
