Ingredients:
  • 100g chorizo sausage*, diced
  • 1 large onion, finely diced
  • 2 garlic cloves, crushed
  • 500g arborio rice
  • 10.00 gm sweet smoked paprika*
  • 1/2 tsp saffron threads
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 1L chicken style liquid stock
  • 200g marinated artichoke hearts
  • 250.00 ml frozen peas
  • 500g mussels, cleaned, de-bearded
  • 100g ham, shredded
Instructions:
  • In a large frypan over medium heat, sizzle chorizo in hot oil, stirring occasionally, until crisped up (about 2-3 minutes).
  • Sauté onion and garlic until tender. Stir in rice, paprika, saffron, tomato, and stock. Simmer on low for 20 minutes, stirring occasionally.
  • Add in quartered artichokes, peas, mussels, and ham. Cook, stirring occasionally, for 5-6 minutes until the mussels open (remove any unopened ones).
  • Garnish with lemon wedges, if preferred.
