Pain perdu: A luxurious French toast with a custardy, crispy coating for a creamy and indulgent bite.
Ingredients:
  • 4 slices egg bread
  • 1 egg
  • 5 tablespoons unsalted butter
  • 3 tablespoons white sugar
  • 1 pinch salt
  • 0.5 teaspoon ground cinnamon
  • 0.33333334326744 cup all-purpose flour
  • 0.75 cup milk
  • 0.75 teaspoon vanilla extract
Instructions:
  • Allow the bread slices to rest on a wire rack to air dry as you make the batter.
  • In a saucepan over gentle heat, melt 3 tablespoons of butter until just melted. Let it cool slightly before using.
  • In a shallow bowl, whisk together egg. Mix in sugar, salt, cinnamon, and nutmeg. Gradually drizzle in slightly cooled butter while whisking. Gradually add flour until a smooth thick paste forms. Gently stir in milk and vanilla until smooth. Set aside.
  • In a large skillet over medium heat, melt the remaining butter.
  • Submerge a bread slice in the batter for a maximum of 30 seconds. Let any extra batter drip off back into the bowl. Transfer the soaked slice to the hot skillet. Repeat the process with the rest of the bread slices.
  • Achieve a perfect golden crust on bread slices by cooking each side for 2 to 3 minutes. Serve immediately for optimal enjoyment.
