Paleo cabbage rolls filled with cauliflower, zucchini, beef, and pork. Irresistibly tasty!
Ingredients:
  • 1 zucchini
  • 2 eggs
  • 1 (28 ounce) can crushed San Marzano tomatoes
  • 1 cup low-sodium chicken broth
  • 1 clove garlic, minced
  • 1 teaspoon dried parsley
  • 1 (8 ounce) can tomato paste
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 small yellow onion, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 tablespoons sea salt
  • 0.75 head cauliflower
  • 2 heads green cabbage
  • 0.25 cup almond flour
Instructions:
  • In a medium saucepan, mix tomatoes, chicken broth, 1 clove garlic, and 1 teaspoon parsley. Bring to a boil. Stir in tomato paste. Pour 1/4 can of hot water into the saucepan after swirling to dissolve any remaining paste. Season with 1 teaspoon sea salt and 1/2 teaspoon pepper. Simmer for about 30 minutes to blend flavors. Set aside.
  • Preheat the oven to 350°F (175°C) to ensure the perfect temperature for baking.
  • Combine beef, pork, onion, 3 cloves of garlic, basil, oregano, parsley, sea salt, and pepper in a large bowl, mixing thoroughly.
  • Bring a large pot of salted water to a boil. Cook cauliflower for 5 minutes, then transfer to a large bowl using a slotted spoon. Next, add one head of cabbage to the boiling water and cook for 5 minutes. Remove with the slotted spoon and repeat with the second cabbage. Finally, separate the cabbage leaves.
  • Use a food processor with a shredder disk to finely shred cauliflower and zucchini. Mix them into the beef until there's an even ratio of all ingredients, then blend in eggs and almond flour until well combined.
  • Place a cabbage leaf on a flat surface. Roll 1 tablespoon of the beef mixture into a log and place it in the center of the leaf. Fold the bottom of the leaf over the mixture, then fold in the sides and roll up. Repeat with the remaining leaves and beef mixture.
  • Start by generously spreading a layer of tomato sauce on the bottom of a large baking dish. Place the cabbage rolls seam-side down in the dish and pour the rest of the tomato sauce over them. Finally, tightly cover the dish with aluminum foil.
  • Allow the dish to bake until the sauce is bubbling beautifully, approximately 1 hour in the preheated oven.
