German-style bierocks: Soft rolls stuffed with savory ground beef, onion, and cabbage, a delectable twist on the classic sandwich.
Ingredients:
  • nonstick cooking spray
  • 2 cups warm water
  • 2 (.25 ounce) packages active dry yeast
  • 7 cups all-purpose flour
  • 0.5 cup white sugar
  • 0.25 cup margarine, softened
  • 1 large egg
  • 2 teaspoons salt
  • 1 pound lean ground beef
  • 6 cups shredded cabbage
  • 1 cup chopped onion
  • 1 teaspoon black pepper
  • 0.25 cup melted butter
Instructions:
  • Prepare a medium bowl and baking sheet by generously greasing them with nonstick cooking spray. Set them aside for later use.
  • In a large bowl, combine warm water and yeast. Allow it to sit for about 10 minutes until it becomes creamy.
  • Combine half of the flour, sugar, margarine, egg, and salt with the yeast mixture. Beat until smooth, then mix in the remaining flour by hand until the dough comes together. Transfer the dough to a bowl, cover with foil, and refrigerate for 2 hours to overnight, or let it rise at room temperature for 1 hour.
  • As the dough is proofing, prepare the filling: In a large skillet over medium-high heat, brown and crumble the ground beef for 5 to 7 minutes. Add cabbage, onion, salt, and pepper. Cook over medium-low heat, stirring occasionally, until the cabbage is tender, about 30 minutes. Remove from heat and allow to cool until lukewarm.
  • Divide the dough into 20 equal pieces and flatten each one on an unfloured surface. Spoon about 2 tablespoons of filling onto each piece, fold the dough over, and seal the edges. Transfer the filled dough to the baking sheet and allow it to rise for 1 hour.
  • Heat your oven to 350 degrees F (175 degrees C).
  • Once the oven is preheated, bake until a beautiful golden brown color appears, which should take approximately 25 minutes. Finish by brushing the tops with luxurious melted butter and serving while warm.
