Pam's plain scones

Light and fluffy scones served with cream and jam.
Ingredients:
  • Melted butter, to grease
  • 300g (2 cups) self-raising flour
  • 2.00 gm baking powder
  • 150ml milk
  • 80ml (1/3 cup) thickened cream
  • 30.00 gm water
  • 2.60 gm milk, extra
  • 2.50 gm water, extra
  • Jam, to serve
  • Double or whipped thickened cream, to serve
Instructions:
  • Preheat the oven to 230°C. Lightly grease a baking tray by brushing it with melted butter. Sift the flour, sugar, baking powder, and salt together twice. Transfer the mixture to a medium bowl and create a well in the center.
  • Combine milk, cream, and water with dry ingredients using a round-bladed knife to cut and stir. Use your hands to bring everything together into a slightly sticky dough.
  • Transfer the dough to a generously floured surface and knead gently until it becomes smooth.
  • Flatten the dough with your palm into a 1.5cm thick disc. Use a 5cm round cutter dusted with flour to cut out discs. Place them 2cm apart on a greased tray. Repeat the process with any remaining dough, bringing it together lightly before flattening and cutting again.
  • Mix together the additional milk and water, then delicately brush the scones' tops with the mixture using a pastry brush. Bake in a preheated oven for 10-12 minutes until they are fully cooked and produce a hollow sound when tapped on the base. Serve the warm or room temperature scones halved, and with a delightful topping of jam and cream.
