Zesty tomato soup with tender tilapia, white wine, and herbs - a comforting winter dish.
Ingredients:
  • 1 tablespoon butter, or more to taste
  • 0.33333334326744 cup diced onion
  • 0.33333334326744 cup diced celery
  • 0.33333334326744 cup diced carrot
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes with Italian herbs
  • 0.33333334326744 cup white wine
  • 0.33333334326744 cup lemon juice
  • 1 pound tilapia fillets, or more to taste
  • 1.5 teaspoons dried Italian herbs
Instructions:
  • In a large pot, melt butter over medium heat. Sauté onion, celery, and carrot until tender, around 5 minutes. Add chicken broth, tomatoes, wine, and lemon juice. Bring to a boil. Gently place tilapia in the pot, add herbs, salt, and pepper. Reduce heat, partially cover, and simmer until tilapia flakes easily, about 10 minutes.
  • Plate the tilapia to keep it warm. Simmer the cooking liquid until slightly thickened, for 10 to 15 minutes. Return the tilapia to the pot and heat through for 1 to 2 minutes.
