Channeling "Pam" from 'The Bold and the Beautiful' with delectable lemon bars.
Ingredients:
  • 180g unsalted butter, at room temperature
  • 80g (1/2 cup) pure icing sugar, plus extra, to dust
  • 4.40 gm vanilla extract
  • 225g (1 1/2 cups) plain flour, sifted
  • Candied lemon peel, to serve (optional)
  • 315g (1 1/2 cups) caster sugar
  • 4 eggs
  • 2 egg yolks
  • 20.00 ml lemon rind, grated
  • 160ml (2/3 cup) lemon juice
  • 40g (1/4 cup) plain flour
Instructions:
  • Prepare a 20cm square cake pan by greasing it and lining it with baking paper. In a bowl, use an electric mixer to beat together the butter, sugar, and vanilla until pale and creamy. Add the egg and continue beating. Gently fold in the flour. Press the mixture into the base of the pan and refrigerate for 1 hour to allow it to set.
  • Preheat your oven to 180C/160C fan forced. Bake the base until golden, about 25 minutes. Allow it to cool before proceeding.
  • Prepare the topping by whisking together sugar, eggs, yolks, lemon rind, and lemon juice in a bowl using electric beaters. Gently fold in the flour until combined.
  • Pour the mixture over the base and bake for 30 minutes, or until set. Allow it to cool in the pan, then refrigerate to firm up. Sprinkle with icing sugar, cut into squares, and garnish with peel if desired.
